Sweet Potato Black Bean Burgers



These Sweet Potato Black Bean Burgers are a tasty and healthy way to eat without meat. They are tasty and healthy because they are full of flavor and have fresh toppings on top.

Ingredients:

  • 1 cup cooked sweet potatoes, mashed
  • 1 can 15 oz black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup grated cheddar cheese optional
  • 4 whole wheat burger buns
  • Lettuce, tomato, and avocado for garnish

Instructions:

In a large bowl, combine mashed sweet potatoes and black beans

Mash them together until well mixed

Add breadcrumbs, chopped onion, minced garlic, cumin, chili powder, salt, and pepper

Mix until the mixture is well combined

Fold in chopped cilantro and grated cheddar cheese if desired

Form the mixture into 4 equal patties

Heat a grill or skillet over medium-high heat and lightly grease it with oil

Cook the sweet potato black bean patties for about 4-5 minutes per side, or until they are heated through and have a nice crust

Toast the whole wheat burger buns on the grill or in a toaster until they are slightly crispy

Assemble the burgers by placing lettuce, tomato, and avocado on the bottom bun, followed by the sweet potato black bean patty, and then the top bun

Skinny Beef and Broccoli Noodles



A healthier take on the classic beef and broccoli stir-fry, this skinny version uses whole wheat noodles and lean flank steak for a nutritious and delicious meal.

Ingredients:

  • 8 oz whole wheat spaghetti noodles
  • 8 oz flank steak, thinly sliced
  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1/2 tsp red pepper flakes
  • 1/4 cup chopped green onions
  • 1 tbsp sesame seeds optional

Instructions:

Follow the directions on the package to cook the spaghetti noodles until they are al dente

Warm up the olive oil in a big pan over medium-high heat

The flank steak should be cooked for about two to three minutes on each side until it turns brown

After you add the red pepper flakes and minced garlic, cook for 30 seconds more

The broccoli florets should be cooked until soft, which should take about 4 to 5 minutes

Put soy sauce, hoisin sauce, and sesame oil in a small bowl and mix them together

Pour the sauce over the cooked noodles in the pan and toss them around until they are well mixed

Add two to three more minutes and cook until everything is hot

If you want, you can add chopped green onions and sesame seeds as a garnish

Grilled Cheese with Apple and Sriracha Butter

Ingredients:

  • 2 slices of bread
  • 2 tablespoons of butter
  • 1/2 apple, thinly sliced
  • 2 slices of cheddar cheese

Instructions:

Spread butter on one side of each bread slice

Place one slice of cheddar cheese on the unbuttered side of one bread slice

Arrange the thinly sliced apple on top of the cheese

Drizzle Sriracha sauce over the apple slices

Place the second slice of cheddar cheese on top of the apples and Sriracha sauce

Cover with the other bread slice, buttered side facing out

Preheat a non-stick skillet over medium heat

Place the sandwich in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side

Remove from the skillet, let it cool for a minute, then slice and serve

Lettuce Tacos with Chipotle Chicken



Instead of regular tacos, try these lettuce tacos with chipotle chicken. They are better for you and have less carbs. The chicken is grilled and tastes great with the spicy chipotle marinade. The fresh toppings and lettuce leaves make the meal filling and light.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 chipotle pepper in adobo sauce, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 large lettuce leaves e

  • 1 cup cherry tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup fresh cilantro, chopped

Instructions:

Put olive oil, minced garlic, minced chipotle pepper, ground cumin, paprika, salt, and pepper in a bowl

This will make a marinade

Pour the marinade over the chicken breasts that are in a plastic bag that can be closed again

Close the bag and rub the chicken with the marinade

Put it in the fridge for at least 30 minutes, or better yet, leave it there overnight

Set a grill or grill pan over medium-high heat to get it hot

The chicken breasts should be grilled for 6 to 8 minutes on each side, or until they are cooked all the way through and have a nice char

Take it off the heat and let it sit for a few minutes

Then cut it into thin strips

Put a few slices of grilled chipotle chicken on each lettuce leaf to make the lettuce tacos

Diced cherry tomatoes, sliced red onion, shredded cheddar cheese, sour cream, and chopped cilantro should be put on top of the chicken

To make it taste even better, squeeze fresh lime juice over the toppings

Serve your lettuce tacos with chipotle chicken right away and enjoy them!

Melt the butter and mix it with the brown sugar and white sugar in a large bowl until the mixture is smooth and fluffy

Mix the flour, baking powder, baking soda, and salt together in a different bowl

Slowly add the dry ingredients to the wet ones and mix them together until they are just combined

The chocolate chips should be carefully mixed in

Using a cookie scoop or spoon, drop cookie dough by the tablespoonful onto a baking sheet that has been lined with parchment paper

For the reindeer's nose, press two red M&Ms onto each cookie

For the antlers, place two pretzel sticks above the nose

Just above the nose, put two candy eyes

For 10 to 12 minutes, or until the edges are golden brown, bake the cookies

After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down

After the reindeer Christmas cookies have cooled, put them in a container that won't let air in

Peach Crumble Tart with Maple-Walnut Ice Cream



This tasty tart has the taste of ripe peaches and a crunchy crumble topping. The rich, creamy maple-walnut ice cream goes perfectly with it. It's an irresistible dessert for any event because the textures and tastes go well together.

Ingredients:

  • 1 pre-made pie crust
  • 4-5 ripe peaches, sliced
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup cold unsalted butter, diced

Instructions:

Before you start cooking, heat the oven to 375F 190C

Line a tart pan with the ready-made pie crust and cut off any extra

Sliced peaches, sugar, 2 tablespoons of flour, cinnamon, and nutmeg should all be mixed together in a bowl

Toss the peaches to cover them all the way

Spread the peach mixture out evenly in the tart crust that has been prepared

Rolling oats, brown sugar, 1/4 cup flour, and cold butter diced should all be mixed together in a different bowl until the mixture is crumbly

Put the crumble mix on top of the peaches in the tart crust

After the oven is hot, bake the pie for 30 to 35 minutes, or until the crust is golden brown and the filling is bubbly

Take it out of the oven and let it cool down a bit

Put scoops of maple-walnut ice cream on top of slices of the peach crumble tart to serve
