Ingredients:
- 4 medium potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley optional
Instructions:
Preheat your oven to 425F 220C
In a large bowl, toss diced potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated
Spread the potatoes in a single layer on a baking sheet lined with parchment paper
Bake for 25-30 minutes, flipping halfway through, until potatoes are golden and crispy
Remove from oven and sprinkle with chopped parsley if desired
