This is a delicious vegan take on the classic Caesar salad. Roasted chickpeas give it extra texture and protein. All the flavors come together in a satisfying and healthy way thanks to the creamy vegan Caesar dressing.
Ingredients:
- 1 can 15 oz chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 4 cups mixed greens such as romaine lettuce, kale, or spinach
- 1/4 cup vegan Caesar dressing
- 2 tablespoons nutritional yeast
- 2 tablespoons vegan parmesan cheese optional
- 1/4 cup croutons optional
Instructions:
Preheat the oven to 400F 200C
In a bowl, toss chickpeas with olive oil, garlic powder, salt, and black pepper until well coated
Spread chickpeas on a baking sheet lined with parchment paper
Bake for 20-25 minutes, or until crispy, shaking the pan halfway through
In a large bowl, combine mixed greens, crispy chickpeas, vegan Caesar dressing, nutritional yeast, and vegan parmesan cheese
Toss until the salad is evenly coated with dressing
Divide the salad among serving plates, and top with croutons if desired
Serve immediately and enjoy!
