Slow Cooker Tomato Basil Soup



This Slow Cooker Tomato Basil Soup is a comforting and flavorful dish perfect for a cozy meal. The slow cooking process allows the flavors to meld together, resulting in a rich and creamy soup that's bursting with the freshness of tomatoes and basil.

Ingredients:

  • 2 cans 28 ounces each whole tomatoes, undrained
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish optional

Instructions:

Place the whole tomatoes with their juices in a slow cooker

Add the chopped onion, minced garlic, and chopped basil

Add the vegetable broth and season with pepper and salt to taste

Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the vegetables are soft and the flavors are well mixed

Pour the soup into a blender and blend it until it is smooth

Add the heavy cream and stir it in
