These Peppermint Thin Mint Buttercream Cookies are the ideal holiday treat. Rich chocolate cookies with a peppermint undertone are topped with a creamy buttercream frosting filled with crushed thin mint cookies. A delectable blend of flavors and textures that will leave you wanting more.
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup crushed peppermint candies
- For Buttercream Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup heavy cream
- 1/2 teaspoon peppermint extract
- 1/2 cup crushed thin mint cookies
- Green food coloring optional
- Additional crushed peppermint candies for topping
Instructions:
Warm the oven up to 350F 175C and put parchment paper on baking sheets
Cream together 1 cup of softened butter and sugar until it is light and fluffy in a large bowl
Add the egg and vanilla extract and mix them in well
Mix the cocoa powder, baking powder, salt, and flour in a different bowl using a whisk
Add the dry ingredients to the wet ones one at a time and mix just until everything is combined
Add the crushed peppermint candies and mix them in
Make little balls out of the dough and put them on the baking sheets that have been prepared
With the bottom of a glass or your fingers, make each ball a little flatter
After the oven is hot, bake for 10 to 12 minutes, or until the edges are set
Let the cookies cool for a few minutes on the baking sheets before moving them to a wire rack to cool all the way
Mix together 1/2 cup of softened butter and sugar until it is smooth and creamy
Powdered sugar, heavy cream, and peppermint extract should be added slowly
Mix the frosting well until it's fluffy and light
You can add a few drops of green food coloring and mix until you get the color you want
When you're done frosting the cake, add the crushed thin mint cookies
Put the peppermint thin mint buttercream on the cookies after they are completely cool
You can either spread it on or pipe it on
For extra decoration, sprinkle more crushed peppermint candies on top of the frosting
Let the frosting harden on the cookies before you serve them or put them away in a container that won't let air in
